Greek Feta & Pepper Boats
Halved peppers filled with feta and tomatoes go into the oven. While they bake, yogurt and cucumber turn into tzatziki.
What it's about
Here, the bell pepper isn't a side vegetable — it's the vessel. It's halved lengthwise, deseeded and filled with a mixture of feta, cherry tomatoes and garlic. In the oven, the feta crumbles a little at the edges, the tomatoes burst, and together they become a sauce for the bread.
The filling doesn't need salt: feta is salty enough. Pepper and oregano are all you need. If you have leftover tzatziki, eat it the next day with bread or potatoes.
Before you cook
The pepper halves stand better if you place them cut-side up in a dish that's snug enough. A dish that's too large lets them tip over and the filling spill out. Baking paper saves you greasing the dish, but it's not essential.
The bread goes into the oven only in the last few minutes, otherwise it gets too hard. Alternatively, toast it in a pan — you can do that while the peppers are still baking.
To serve with and afterwards
For two people, plan on two peppers and one pack of feta; if you like more filling, take a second pack and fill them more generously. Any leftover boats can be reheated the next day at 160 °C without the feta drying out.
The boats feature in the sample weekly plan on Wednesday; on Wednesday, the remaining feta goes into the pasta with feta-tomato sauce.
Ingredients
- 2 red peppers
- 200 g feta
- 200 g cherry tomatoes
- 1 garlic clove
- 1 tsp dried oregano
- 2 tbsp olive oil
- 2 slices sourdough bread
- 150 g Greek yogurt
- ½ cucumber
- 1 tbsp lemon juice
- Pepper
Preparation
- Preheat the oven to 200 °C top/bottom heat. Halve the peppers lengthwise and remove the stem and seeds.
- Dice the feta, halve the tomatoes and finely chop the garlic. Mix everything with the oregano and 1 tbsp oil and season with pepper.
- Fill the pepper halves with the mixture, place them in a baking dish and drizzle with the remaining oil. Bake for 20 minutes, until the peppers are soft and the tomatoes have burst.
- Coarsely grate the cucumber, stir it into the yogurt with the lemon juice and season lightly with salt.
- Toast the bread in the last few minutes. Bring the boats to the table with the tzatziki.
